About The Chef
Founded by Chef Abigail Schmitt in 2021, Ginkgo Fine Dining is the culmination of her culinary artistry, wellness lifestyle, and worldwide professional experience. With roots in Minneapolis, MN and global experience spanning New York to Mexico City, Japan and Canada, Abigail brings a soulful, ingredient-driven approach to every dish. Now based in British Columbia, Canada, she crafts intimate dining experiences, offers wild cooking experiences, and offers consultation on recipe development and restaurant conception - all inspired by a love for nature, good food, and intentional living.
