My Resources for Foraging and Cooking

We are students of the world, and there are so many people and places that we can learn from. Here are some of my favorite resources that I use for identifying wild mushrooms, and lending inspiration for many of my recipes.

Local PNW Books and Companies

Fruits of the Forest by Daniel Winkler writes a book on Edible Mushroom Identification

Wild Mushroom Cookbook by Kristen and Trent Blizzard - fantastic photos, recipes and features for other forager friends

Cascadia Mushrooms, of course! Local mushroom growers with lots of education on how to grow your own mushrooms

Easy Tip: Another place to buy mushroom logs in PNW area in store, is Uwajimaya

Favorite Forager Chefs + Authors

Alan Bergo - Forager, James Beard Award-Winning Chef and Food Writer has lots of great resources on his site and instagram @foragerchef

Hank Shaw - Hunter, Gatherer and Chef - has a food blog and includes lots of great recipes and info on his site or instagram @huntgathercook

Alexis Nikole: Strong and loving personality, Chef, Environmentalist and Forager @blackforager

Other Sides of the World:

Mexican friend and forager Nane Watabe just wrote a beautiful book "Estado de Hongos" about the diversity of mushrooms in Mexico.

Follow her on Instagram @nanwatabe

Guide to Wild Edible Mushrooms of Yunan, China by Hanna Che "...This summer, I tried to document every wild mushroom variety I could find in the markets here in Dali, Yunnan, focusing on commonly eaten species that are generally safe for consumption (certain mushrooms are questionable when it comes to digestibility). I cooked and ate each one to record their flavor, and also asked the vendors how they prepare them." Read more by Hannah Che, Author of The Vegan Chinese Kitchen

Japanese Chef and inspiration Keiko Kuwakino, chef at @satoyamajujo in Niigata - a Michelin Star Luxury + Nature Inspired Restaurant / Hotel. Find more of her beautiful videos @keiko_kuwakino

Thank you to each of these individuals for their knowledge and inspiration!
